Balsamic Bacon Burgers

I know it’s not outrageously unique to associate burgers with summertime, but truth be told, hamburgers aren’t something I prepare all that much. Shhh. Don’t tell my americana queen alter ego. There’s no exciting reason for the small number of times we eat burgers…mostly it’s just because I don’t happen to have all the fixings in my fridge at any one given time.

This was no exception…I had ground beef thawed out, but didn’t have lettuce, or hamburger buns, and the only tomatoes I had on hand (always have on hand!) were grape tomatoes, which I was using in a chickpea and tomato salad to go on the side of whatever it was I finally decided to make.

So, I arrived at this recipe because I had been wanting to make these homemade hamburger buns for a while. I then remembered saving her recipe for these burgers as well, and did have the ingredients for them! Even though the name sounds fancy, the ingredients involved are actually pretty basic pantry ingredients (onions, vinegar, and bacon).

Chocolate Peanut Butter Smoothie

I wish I was a smoothie person, but I’m not. I like them…I just don’t love them. I typically need more for a meal; something substantial, something that I can actually eat…

I could do a smoothie for a snack, easily. But unfortunately, smoothies typically have almost as many calories as a small meal, albeit good calories, and I just can’t do that.

This smoothie is an exception. My husband and I have both been drinking this for breakfast for the past few months (at least when we are working) and Benj even requests it for lunch quite often when we are home.

Slime {Indoor Activity}

KiKay LOVES being outside, and while I really would like him to be able to spend as much time outside as possible, it is just way, way too hot right now to be outside for more than, like, oh…two minutes. I know that kind of makes me sound high maintenance, but it just truly feels like you are stepping in to an oven when you walk outside on a day like this. So I have been trying really hard to keep him occupied on the days he is home with us during the summer (we opted to keep him in daycare 2 days out of the week…because he enjoys it, and it keeps him from having to re-acclimate when we go back to work each fall.)

Right now though he is wearing dish gloves and riding a rubbermaid tote with wheels around the living room. View full post »

Chocolate Almond Pie {3 Ingredients}

Here on my little portion of the www I don’t proclaim to be a trained chef….I am not…. or a mom who knows how to keep her son occupied and educated at all times….I don’t.

But I have had a wonderful 29 years filled with the things I hope to pass on to my new family….home cooked meals, childhood pleasures, and loads of opportunities to create and express. The enormity of what the mind can hold has never been more evident to me than it is when I think about how MUCH I want to do in the few hours I have after work and during my time off.

My priority is of course my family, but if I can include my family in my other loves…food, photography, art, home design, etc. then we all win. Well, KiKay wins, because he thinks everything I come up with is the most fun thing ever (at least for 10 minutes). My husband on the other hand just lovingly supports all my ideas. 🙂 View full post »

I’ve used the whipping cream…just due to wanting real cream…I add a bit of vanilla…like a tsp. This dessert NEVER fails to impress!
